Smoked Oysters – The Recipe

This is a foolproof method for cooking oysters and it’s perfect for first-timers as well.

Ingredients
  

  • 24 oysters
  • 1 stick of butter
  • 1-2 slices bacon
  • 2 cloves garlic
  • 1 tbsp minced parsley
  • 4 lemon wedges
  • Wine
  • Woodchips

Instructions
 

  • Turn on your skillet or smoker and heat it at medium-high.
  • Cook your bacon slices on the skillet until they are crispy. When they are done you can place them on a paper towel and put them on the side.
  • Take a bowl and add the butter, crumbled bacon, minced garlic, and some parsley and blend this mixture.
  • Once it’s well-blended, place it on a sheet of plastic and roll it to form a cylinder.
  • Seal it on both ends and then place it in the freezer so it cools down!
  • Take a water bowl and place water and dry white wine in it and put the wood chips on the tray.
  • Put your smoker to preheat on 200°F – 225°F.
  • Shuck the oysters and carefully place them on the sheet trays.
  • Take out the compound butter and cut it into coins, then place a coin on each oyster and then place the entire tray into the smoker.
  • Smoke your oysters for around 30 minutes and you’ll know your oysters are properly smoked when the butter has melted, and they have slightly curled edges.
  • You can continue the smoking process at 15-minute intervals until they reach your ideal level of cooked.
  • You can serve the oysters with lemon wedges for some extra flavor, and you can even add some salt if you feel like it.

The best thing about this recipe is that it does not use too many ingredients and is relatively simple.
If you are looking for perfect smoked oysters it’s a good idea to purchase and prepare them in a cast iron oyster pan as those are tailor-made for smoking oysters. And in case you don’t own a smoker you can get a small electric smoker. It’s both easy to use and store.
