Masterbuilt Smoked Salmon

Ingredients
  

  • 1 3-4 lb salmon fillet Remove the skin
  • 3 bay leaves
  • 1 tbsp fresh minced gingers
  • 1 cup brown sugar packed firmly
  • 1 tsp allspice crushed
  • 1 tsp honey
  • 3 slices red onion
  • 6 tbsp salt
  • fresh dill
  • 2 cups apple or hickory chips
  • 1/2  cup whole peppercorns

Instructions
 

  • Add 1.5 cups to a large pan, and then add water, sugar, salt, ginger, bay leaves, and Allspice. Boil over high heat and stir until the sugar dissolves. Let cool.
  • Rinse salmon fillet and pat dry. Place in a 12 x 15 inch pan if making more than one. Pour the brine you have made over the salmon. Cover and let chill for 24 hours. Spoon brine over the fish from time to time.
  • Put hot water over the peppercorns and let them float for about 15 minutes. Soak your woodchips for about 30 minutes and preheat your smoker to 200 degrees F.
  • Pour the brine off your fish and rinse with cold water. Pat dry. Set fillets with skin side down on a sheet of aluminum foil. Trim the foil to be the outline of the fillet.
  • Lightly oil the rack in your smoker and place fish on it. Smoke for 1 hour to 1.5 hours. The internal temperature will need to be about 125 degrees F at the thickest part of the fillet when done. Fish should flake cleanly as well.

Notes

Make sure that you don’t cut corners or try to smoke for less time than recommended in the recipe. You can serve these fillets as the main course or as an appetizer alongside other charcuterie items. Some people also serve this kind of salmon for breakfast.
Also be sure that you are prepared to store your marinating salmon in your fridge for the full 24 hours. You might need to clear out some extra room if you are making a large batch of fillets. This is one of the reasons that people are often tempted to cut corners when making this recipe, but you want to be sure that you plan ahead so that you avoid this issue.
