Grilling frog legs is the easiest way to make them, and you can select from nearly any marinade that you wish when you are preparing your frog legs for cooking. You can choose to make them spicy or mild, and you can opt for barbeque flavors, Asian flavors, and more.
Place the frog legs in a single layer in a baking dish or a Pyrex. You will want to mix together the oil, lemon peel, and the lemon juice. Add onion, parsley, salt, mustard, and basil to the mix. Measure out 1/3 cup of your marinade and cover it. Place it in the fridge to chill.
Pour the remaining marinade over the frog legs and turn to coat. Cover with plastic wrap and place in the fridge to chill for about three hours. Make sure to turn occasionally.
This recipe works well with the best small gas grills, such as the Char-Griller E1515, and you will want to preheat your grill. You should drain your frog legs and throw out the marinade they were in. Grill at medium heat, covered for about three minutes. Turn the legs over and then cover again. Cook for another 3-4 minutes or until the legs are no longer pink in the middle. The meat should being to separate from the bones.
Combine the leftover marinade with the butter and garlic in a saucepan. Cook over medium-high heat for about two minutes until the butter is hot and has melted. Stir frequently as you are warming. Pour over your frog legs, and then serve hot.
Notes
You can also fry your frog legs. Just make sure that you are not cooking the outside to too high of a temperature, leaving the middle of the legs raw.
