Take one slice of bread and sprinkle half of the grated cheese on it. Grab the Mandoline of the truffle peeler to shave fresh truffle over it before covering it with another layer of grated cheese. Sprinkle the sea salt then layer the other piece of bread on top.
Heat the skillet on medium-high heat. Apply one tablespoon of butter on the outside of one piece of bread. Place the sandwich on the hot skillet, buttered side down then cook until golden brown for about 3 minutes.
Spread the remaining butter on the other piece of bread before flipping the sandwich over. Cook until the cheese melts and the bread is browned and crispy.
Transfer the sandwich to a cutting board and cut in the middle. Serve immediately when still warm.
